Espresso is neither a type of coffee nor a mixture of beans, but a process through which coffee is made under hydraulic pressure. Typically, it is a small cup of dark, strong coffee with hazel coloured cream on its surface.
MAKE THE PERFECT ESPRESSO
To successfully obtain the perfect espresso, you should to follow these 6 rules:
- Dose of ground coffee: 7 grams (+/- 0.5 grams).
- Temperature of water injected into the ground coffee: 88°C (+/- 2°C).
- Temperature of the espresso in the cup: 67°C (+/- 2°C).
- Pressure of water injected into the ground coffee: 9 bar (+/- 1 bar).
- Extraction time: 20 to 25 seconds.
- Amount of coffee in the cup :
- Ristretto : 25 millilitres
- Espresso : 60 millilitres
PREPARING AN ESPRESSO COFFEE
Follow these instructions to prepare the perfect espresso
- Grind the coffee separately for each individual cup.
- Remove 7 grams of coffee from the grinder in the filter holder.
- Pack the coffee down in the filter holder, using a tamper, so that the water is distributed evenly over the entire surface of the coffee.
- Clean the edge of the filter with the palm of your hand to remove possible traces of coffee powder.
- Lock the filter holder into the brewhead.
- Place a pre-warmed cup below the coffee outlet.
- Select the desired dose by pressing the corresponding key.
- Serve the cup of espresso quickly.
- Empty the coffee from the filter holder and lock it back into the delivery group in order to keep it hot while the coffee is being served.
Note : An espresso is due to :
- The cleanliness of the machine : cleanliness = quality
- The water quality : a well quality water reduce the operation and maintenance costs
- The quality of the coffee : the coffee must be very fresh
- Grinder adjustements : the ground must be fine and homogeneous
