Espresso is neither
a type of coffee nor a mixture of beans, but a process through which coffee
is made under hydraulic pressure. Typically, it is a small cup of dark,
strong coffee with hazel coloured cream on its surface.
MAKE THE PERFECT ESPRESSO
To successfully obtain the perfect espresso, you should to follow
these six rules :
1.
Dose of ground coffee: 7 grams (+/- 0.5 grams).
2. Temperature of water injected
into the ground coffee: 88°C
(+/- 2°C).
3. Temperature of the espresso
in the cup: 67°C (+/- 2°C).
4. Pressure of water injected
into the ground coffee: 9 bar (+/- 1 bar).
5. Extraction time: 20 to 25 seconds.

PREPARING AN ESPRESSO COFFEE
Follow these instructions to prepare the perfect espresso
1. Grind the coffee separately for
each individual cup.
2. Remove 7grams of coffee from the
grinder in the filter holder.
3. Pack the coffee down in the filter
holder, using a flat packer, so that the water is distributed evenly over
the entire surface of the coffee.
4. Clean the edge of the filter with
the palm of your hand.
5. Lock the filter holder onto the
brewhead.
6. Place a pre-warmed cup below the
coffee outlet.
7. Select the desired dose by pressing
the corresponding key.
8. Serve the cup of espresso quickly.
9. Empty the coffee from the filter
holder and lock it back onto the delivery group in order to keep it hot
while the coffee is being served.

espresso, the cleanliness of your equipment is just as important as the
